Why is Roman Catholicism and Paganism so similar?

Okay, I know all about that whole thing of christianity stealing ideas from paganism and stuff, but what I want to know is how did they make some of the most conflicting things (such as holidays that celebrate other gods) be used by both a monotheist and polytheist religion and not cause conflicts?
